Papain is a protein-breaking enzyme
Papain is a protease associated strongly with papaya latex. Proteases cut proteins into smaller components, which explains why papain can change the structure and tenderness of meat. That activity is chemical rather than mechanical, so a small change in enzyme concentration or exposure can matter. Fresh papaya preparations do not have a standardised enzyme concentration, which is why home tenderising methods should be conservative.
Why green papaya is used in marinades
Unripe papaya and papaya latex contain proteolytic enzymes. Traditional and commercial tenderising methods use this activity to soften tougher meat. The effect depends on concentration, contact, thickness, temperature and time. A thin piece exposes much more of its mass to the enzyme than a thick roast, while a puree spread on the surface does not act as though it were evenly distributed through the centre.
Too much tenderising damages texture
Enzyme action does not stop at an ideal tenderness point on its own. Excess papain exposure can break down structure too far and produce a soft or mushy surface. This is why the site uses a conservative tenderising guide rather than pretending an exact universal minute count exists. Test a modest quantity first and do not assume that doubling the time will produce twice the desirable effect.
Heat eventually stops enzyme activity, but timing still matters
Cooking denatures enzymes as temperature rises, but meat can continue to soften while active enzyme remains and conditions allow it to work. Heat cannot rebuild structure that was already broken down too far before cooking. Treat papain exposure as a controlled preparation step, remove the fresh papaya preparation before cooking, and follow measured package directions when using a commercial tenderiser.
