Choose the right papaya

This recipe uses ripe papaya. Choose fruit that has developed yellow or orange colour and yields gently rather than feeling hard. For salads and dishes requiring neat pieces, use ripe fruit that still holds its shape. For blending or mashing, softer fully ripe fruit works well. Ingredients

  • 3 cups ripe papaya, peeled, seeded and cut as needed
  • 150 g feta
  • 1 cucumber
  • 2 tbsp olive oil
  • 2 tbsp lime or lemon juice
  • mint
  • black pepper

Method

  1. Wash the papaya before cutting, remove the seeds and prepare the ripe flesh to the size the recipe needs. If the fruit is very soft, handle it gently so it does not collapse before it reaches the dish.
  2. Combine papaya and cucumber, add crumbled feta and dress with citrus and olive oil. Finish with mint and pepper.
  3. Taste the dressing and the papaya together before making the final adjustment. Salt and acid can draw water from the fruit and vegetables, so add the dressing close to serving when crispness matters.
  4. Serve once the flavours are balanced. Refrigerate leftovers promptly, especially when the salad contains dairy, seafood, cooked meat or other perishable ingredients.

How to get the texture right

Ripe papaya becomes more fragile as it softens. Fold it into salads and plated dishes instead of stirring aggressively. In blended recipes, fully ripe flesh produces a smoother texture and usually needs less added sweetener. In baked recipes, smaller pieces spread moisture through the batter more evenly than large chunks, which can leave wet pockets around the fruit.

Adjusting the flavour

Papaya varies in sweetness, aroma and acidity from fruit to fruit. Taste the prepared fruit before making optional adjustments. Lime or lemon can sharpen very sweet ripe papaya, while a mild fruit often benefits from acidity, herbs or spice more than from extra sugar. Green papaya contributes less sweetness and usually takes its character from the dressing, curry base, aromatics or seasoning around it.

Storage and leftovers

Cover and refrigerate leftovers promptly when the dish contains cut fruit, dairy, cooked meat, seafood or other perishable ingredients. Fresh salads are usually best soon after dressing because salt and acid draw water from fruit and vegetables.
